Serves 8

Effortless meals like this one are perfective for serving either guests or family members.

   • 2 pounds boneless, skinless chicken breasts
   • 1 teaspoon dried basil, crumbled
   • 1 teaspoon dried oregano, crumbled
   • 1 14.5-ounce may no-salt-added diced tomatoes, undrained
   • 1 9-ounce package frozen artichoke hearts, thawed
   • 1 cup fat-free, low-sodium chicken broth
   • 1 2.25-ounce may sliced black olives, drained
   • 1/2 teaspoon salt
   • 1/4 teaspoon pepper
   • 1/4 teaspoon crushed red pepper flakes (optional)

Discard all visible fat from the chicken. Sprinkle both sides with the basil and oregano. Put the chicken in a 3 1/2 to 4-quart slow cooker.

Stir in the remaining ingredients. Cook, covered, on high for 3 to 4 hours or on low for 7 to 8 hours.

This book has come in so handy since we have had to make lifestyle changes due to high cholesterol. The best thing about this book is that it uses pretty basic ingredients that you can find at any grocery store. Other books I have with low cholesterol recipes had odd ingredients that I just won’t keep in stock normally. The recipes offered by the AHA cookbook identify with “real”, everyday people making the lifestyle transition much easier than I originally thought. The final outcome: Palate tantalizing dishes appropriate for the whole family.

5Excellent book

I first bought an earlier edition of this book a few years ago when I decided it was time to lose weight. It made cooking for a family of 4 super easy. The meals are delicious and healthy…although there are a few recipes that didnt fit my taste.

At first, you do end up spending more at the grocery store to buy all the new spices & a few new ingredients, but eventually, the cost tapers down. Our weekly grocery bill averaged around $150.00 for a family of 4 adults which included 3 meals a day with snacks. So, I have to say that it is pretty cost efficient as well.

By cooking directly from this book, eating about 1600 claories a day, and walking on the treadmill 20 minutes a day, I went from 286 lbs down to about 215 lbs in 3 months. At that point, I got a gym membership and cut back on my calories just a little bit more (down to 1500). I am now 138 lbs and have been able to keep it off so far.

This book definately gave me a good kickstart to to getting my weight down (and giving my heart a break). I would recommend it in a heartbeat!!!

4GREAT recipes!

My husband was put on a low-fat diet so I picked up this cookbook because I liked that it was by the American Heart Association. Every recipe I’ve made has been delicious! (with the exception of one dessert which was just okay, but low-fat desserts are tough) I will say though, that this cookbook can’t be called quick and easy. As someone else mentioned, I have to plan in advance so I can pick up all the ingredients at the grocery store. You also have to make sure to allow plenty of time for cooking the meal. Nothing has been very fast, although it’s nothing overly complicated for this basic chef.

All-in-all, I would recommend this cookbook to anyone trying to eat healthier as I think it’s an easier transition when the food tastes good, and these recipes definitely do!

    I am very disappointed in this cookbook. My husband and I have just begun to watch our cholesterol and we thought an American Heart Association cookbook would be a good start. Unfortunately, I’ve read through the entire book and can’t imagine eating this way. These low fat, low cholesterol recipes are just worked over true-blue American food which is generally inedible no matter what! I’m going to look for other cookbooks and other recipes that actually have flavor, interesting ingredients, and a reason other than “low cholesterol” to make it to our dinner table.

    I have used several recipes from this cookbook. I have found them to be fairly easy and all that I have tried have tasted really good. The taste is so good you would never know that you were missing all the yummy fat or cholesterol.

    I have used the first AHA Low-Fat, Low Cholesterol book since its publication. Have not had this issue long enough to try many of the recipes but, frankly, have not seen many that interest me. Having had a chance to look this book over first, I would not have purchased. If you are a first-time user, perhaps you will feel differently.

  4. Nice recipes that are low in fat and cholesterol

    Heart disease is a major cause of death among Americans (number one, in fact). As the book makes clear, the good news is that certain steps that an individual takes can measurably accept the odds of suffering from or succumbing to heart disease. One of these is by reducing fat and cholesterol in one’s diet.

    Some low fat and low cholesterol cooking can be very bland and disappointing. The recipes here tend to be pretty good, providing good taste as well as healthy food.

    With chili, for example, use a proper oil for cooking, use lean ground sirloin, use no-salt tomato sauce (to be honest, I scarcely ever use salt in recipes, even when called for, and I haven’t noticed any problems–but I also use other herbs and spices and these suffice very nicely). The result? A nice chili with lower levels of fat and cholesterol.

    The same with other recipes. A little common sense with fat and cholesterol and one can end up with tasty meals that are also healthy meals. Not all recipes are necessarily equally tasty, but experimentation will tell the reader which ones to add to the repertoire of dishes that one prepares.

    So, a useful cookbook. Interested in reducing fat and cholesterol? Take a look.

    I have found the recipes in this book to be better than what I expected. I feel like I have more energy just after a few days of being on a low cholesterol diet and if I physically feel a difference that soon, then my cholesterol must be dropping. I must worn you that if you don’t like to cook, then this isn’t the book for you. The recipes in here require a lot of fresh foods and time to prepare them, about 45 minutes. But I have to say it is well worth the effort. My health is what’s most important. I can’t afford to be a picky eater with my cholesterol.

    I cannot see how this book can claim low cholesterol because the main meals show listings that are very high.

    I won’t keep this book because it’s really no help what so ever.

    I’ve been learning to cook with several cookbooks and have done fairly well. This book is 0 for 2. Without the pictures, anywhere, it is difficult to decide what looks delicious enough to cook after a long day at work. The wording in the directions are also a bit confusing. For example, “In a large saucepan bring the asaparagus, salt, pepper, broth and peppers to a boil..” Now, wouldnt you see asparagus and think, oh that needs water..?? Well no. It means to put it in the broth and bring THAT to a boil. It would have been better if it named the broth FIRST! That way you know that the liquid is the broth and therefore NO NEED FOR WATER…Which of course, made my meal bland, my husband laughing at me, and 3 hours wasted FORRRR NUTTIN!…Now I have to spend the rest of my night hungry, and annoyed!! BOO. For those learning to cook, I suggest the Martha Stewart book. Now those are pictures and well directed instructions! ….hiss…hiss…

  12. Good recipes, but lacks appeal

    This is another good source of low fat / low cholesterol recipes. However, if you are like me and like to see photos of what you’re cooking, this cookbook isn’t for you. I was very disappointed that there are no photos other than the cover. When I go through a cookbook looking for a new recipe to try, if the food looks good in a photo, I want to try the recipe. I personnaly recommend the Betty Crocker Low Fat / Low Cholesterol cookbook if you want good recipes with photos.

  13. Not the normal quality recipes from AHA

    I purchased this book because we have cholesterol issues in the family, and so far, I’ve made 3 or 4 recipes involving beef. They’ve been very dry and not visually appealing (with kids, this is important!:)) I’ve found most of the entrees have been time consuming to prepare as well, lots of ingredients. Truthfully, the only thing I’m enjoying from the book is the information in the beginning about cholesterol and how it affects your health- lots of great informative points on this but the recipes are just not very tasty. I also own American Heart Association’s Meals in Minutes, which is much better.
